    It's Mole Day!
    Celebrate never having to take another chemistry class today. No more mole conversions. No more dubious attempts at correct nomenclature. No more separation of substances with different properties. No more nightmares, man.

    I see Mexican food so yes, you did it right.

    I've never really had mole sauce, definitely never on enchiladas. We make enchiladas every once in awhile but always with red sauce. Oh shit. This made me realize we have all the ingredients to make that. Yes!

    Do you make or buy your mole sauce? Favorite brands? I need direction on this.

    I make my own from a mole base. Making our own base can be a tedious and lengthy process. There are lots of brands in the international food aisle at the store. I probably have more Mexican food in mine than you do though.

    This is house made brand from the local Mexican meat market here. It’s really good, but can be a tad sweet at times.

    Most brands are pretty decent. Just mix it into some chicken stock and add your chicken and let it simmer for a couple of hours. Serve with beans and rice.

    Awesome.
    There's a large Hispanic population here and at least 2 Mexican groceries in town. One has a beautiful meat counter. I've never looked for mole base but will put that on my mental ''to try'' list.

    This documentary is coming like a freight train so heads up (available now on Amazon Prime):



    Luke Dick, while known for having one of the greatest names ever, is also a hit songwriter in Nashville, getting cuts by everyone from Miranda Lambert ("Bluebird") to Dierks Bentley ("Burning Man") to Eric Church ("Kill a Word"). His mother was a dancer at Oklahoma's infamous Red Dog Saloon, where he was basically raised. The documentary is a look back at that time and the characters involved, and I think everyone is gonna be talking about it pretty soon.

    Speaking of Mexican food...

    If you have a large Hispanic population, there's a chance that your local grocery store carries "Bimbo" white bread. It's glorious if you like white bread, which I do. It's moist, like the Wonder Bread from my childhood was (Now Wonder Bread is just dry, disgusting and $3.29 a loaf.) Bimbo bread is like .99 a loaf and better then anything else out there.

    Back when I worked for the medium duty GM dealer we serviced Workhorse brand trucks, which happened to be Bimbo bread trucks, those drivers used to hook us up with everything bimbo made to get a truck back on route.

    Bimbo bread is amazing.

    That's what I do. We don't eat a lot of bread anyway and by making it myself i can make a really soft whole wheat high fiber bread. The secret is extra gluten.
