Yea same around here, usually when you wake up after a few days of cold and all the sudden it is warm you know it is going to be a windy ass day.
We’re in the winds lately. Red flag warning and multiple brush fires springing up in the area. I don’t think I’ll be able to really work on beautifying our lawn this year, but I am going to start watering it. If I don’t it’s just mowing dust in certain places.
We've been getting sustained gusts up to 60mph here all afternoon. Luckily power has remained on and so far, worst thing it looks like I'll have to deal with is cleaning up a bunch of sticks from the tree in the front yard. But we're still under a wind advisory for another 3 hours, so we'll see.

We’re in a similar boat but our power keeps flickering. Which is annoying because a) it kills the wifi every time and my kid is dead set on a movie night, at this rate it’ll be 10 by the time we finish it, and b) every time the power comes back on, the ceiling fans in my bedroom and the living room come back on at 100% brightness, which is completely unhinged and a terrible design flaw. If it keeps happening we might have to sleep in the guest room since there aren’t any “smart” lights in there.
So last night, a fire broke out and engulfed a house in my neighborhood, about a block down. Not sure what started it, but it looks like maybe something in their RV and then it hit the propane tank. I was out getting our dinner order, so I was five miles away and my wife is texting about hearing an explosion. Then I look on Facebook and the local scanner page is saying they’re evacuating….so I’m driving home watching a plume of black smoke and screaming at rubberneckers. turns out it was just the adjacent houses being evacuated, and they were getting it under control. But my next door neighbor offered to park his hauling trailer at our place so I can clean up the dead tree that fell. I was waiting until winter was over, but it’s probably best to do that now.
I made the most amazing Bechamel sauce of my life tonight. Mom picked up some super fresh and huge scallops today and asked me to make a nice pasta dish with them. Challenge Accepted. Did a white sauce (bechamel) based on some Old Bay seasoning and some garlic powder and a shit ton of parmesan and greyere cheeses, and then pan fried the scallops in garlic butter, served over a bed of pappardel pasta. Oh fuck yeah. Hope your Saturday night is going as well.
We finally made (reheated) the spiral cut ham I got from work for Xmas. The almost 3 y/o grandson is here and his battery just. Doesn't. Stop. Ever. I am wore the fuck out and much respect to parents who deal with this full time. Especially single.parents.
Everyone has a CPAP machine now and gas prices are through the roof. I think that pretty well covers it. ¯\_(ツ)_/¯
I’ve got some heavy shit I need help moving, but I’m so old now that every one of my friends has a bad back, bad knees, bad shoulders or some combination. I’m going to try to McGuyver my way through so I don’t have to actually pay someone to move things.
I mentioned in the Rant/Rave thread that my son is in Dublin Ireland with his college marching band. Coming from a long line of Irish/German ancestors, I like beer. Apparently my 19 year old son enjoys Guinness and ciders as well. He sent a short video of him and his friends trying Guinness for the first time. All the friends took a ship. Not my boy, he took a DRINK. Video ended before I could see if he split the G though. Not sure if I should be proud or scared, but as long as the drinking stops when he leaves Ireland and I continue to pretend he isn't drinking while at parties in college all is good.
Any of you ever cooked turkey breast steaks? My kid picked them up and put them in the buggy, I decided to keep them and try them. I'm the only one here that is going to eat them, so I'll probably blacken the fuck out of them and cook them in the skillet. Unless someone here has other suggestions. If you haven't seen them before, because I certainly never saw them before, they're exactly what they sound like. ~5/8" thick slices of turkey breast, like a steak.
I do boneless skinless turkey breasts almost like braising them. Brown it briefly in a heavy pot with some oil, toss in some liquid (anything from chicken broth, to a soup of some sort, like cream of celery or cream of mushroom), then put the lid on and let it cook for a while. I generally keep it at a low temp to not burn the liquid (lower temps for a cream based soup, higher for plain chicken broth), then have a thermometer in it to tell when the turkey is at temp. Depending on the liquid that is left, I'll thicken it a bit with a flour slurry or some corn starch. I'll also add some frozen peas or corn at the end sometimes. Cayenne pepper or other spices to taste. The end result is that it keeps the turkey nice and moist, rather than drying it the fuck out. You could treat the steaks the same way, I'd think.
To me, turkey doesn't benefit from the maillard reaction (the thing that makes crusty steak taste so good). It's all about trying to cook it without drying it out, and then piling on the add-ons, like stuffing, or gravy, or cranberry sauce, or mashed potatoes, etc. Turkey white meat is the worst thing to try and keep moist. You could also sous vide it in some butter and rosemary, etc, to get it cooked and keep it moist. You could also brine the shit out of it to infuse that moisture before you cook.
I was brining them all morning. I did what I said, because I'm an impatient man. A thick coating of Cajun's Choice Blackened Rub. 2 tbsp of oil, and 2 tbsp of butter in my big skillet on medium high. 3 minutes each side, with my lid on my skillet. Let them rest in a room temp covered dish. This is actually the same way I cook my blackened chicken breast for my incredible sandwiches I make myself. They came out great! Really juicy and tender. I roasted one whole turkey, of which the breast was more moist than these steaks. It was back in 2017 and I've never been able to nail it like that again. I was pleased with the results, but I'm the only that lives here that will eat them like that. Wife and kid are sissies, and do not like blackened seasoning or other spicy food. I doubt blackened turkey breast steaks make it into the regular rotation of meats I cook for my family, but I can't say that I won't do them again for myself. We'll see how they do as leftovers, when reheated. I ate two and have two for later.
Are you talking big boneless breast cuts, or the uniformly sliced steaks, like I bought? Because I definitely know big, thick beasts are drying out while trying to get the center up to cooked temps.
