    Honey it's hot out there.

    We are officially in fire season and between random acts of sparks and arson, there are regular fires being extinguished all around this area.

    I was at the river with a group today and witnessed a wildlife pop up and spread. I called it in but authorities were already aware. We watch it spread over the next hour and 45min before the planes came in. It was pretty cool watching the 3 planes work. They first flew a couple loops to survey, then went up river to collect water and dump it on specific zones of the fire. They looped over and over, scooping water closer and closer until they were scooping water right in front of our group and flying overhead. I read later that it was about 175acres.

    That is very awesome. We’re not quite there yet but my buddy bought even more lights this week, and he has a control board that he’s programmed for different “scenes “. I contributed one fog machine. The rest is all him.

    I thought I was going to end up closer to this than I expected yesterday.

    We went on a pretty aggressive hike but were confident that we'd be done before the bad weather rolled in (or could abort if it rolled in early). Got caught in the awkward spot where we were close to the summit and had put in all the work, so we didn't want to abandon the hike but saw the dark clouds. So we hustled up, tagged the summit, and saw this inbound:

    We were going as quick as we could down the slopes without falling to our deaths, and saw the rain start sweeping along the far peaks and heard some brief rumbles. I took a quick cellphone shot so the color is funky.

    Felt a few rain drops so we got the wet weather gear out and then... nothing. The clouds dissipated, rain vanished, never heard another rumble the rest of the hike.

    Been a long weekend with not much downtime.

    Tonight smoked the best ribs I’ve ever made, along with some smoked baked beans.

    It was a great day of doing nothing and enjoying some fantastic summer food.

    They might eventually burn their own house down.

    Maybe they can program something light to entertain the Mon-Fri crowd, like some smooth jazz or Simpsons vapor wave.

    How does smoking the beans work? Do you still need to boil them first? Some good ol' boy from the South that I work with swears by them.

    Honestly I cheat. I grab a jar of fresh sweet chili sauce and dump it into 2 big cans of heinz baked beans, and add a bunch of the bbq rub I used on the ribs. I put them into a big cast iron pan, so the beans have tons of smoke area and are shallow in the pan. Throw them on the smoker when I start the ribs. I generally add some chicken stock or mexican beer about 90 mins in as the liquid boils off. when I glaze the ribs and tack them up for the last 15-20 mins i put tex mex shredded cheese on the beans. 3-3.5 hours total smoke/cook time.

    More than anything you’re just infusing the smokiness into the beans and letting the rib juice fall into the beans as everything slow smokes/cooks.

    If I were to do them home made I’d basically make baked beans as per normal (boil them, etc) and then smoke them the same way as I explained. Basically I start with baked beans and then smoke them.

    If I’m being decadent I’ll add pre-cooked pork belly burnt ends or salt pork, or cooked brisket before I smoke them.

    You all know what day it is. My buddy blacked out his garage windows to enhance the light system so even though it’s 7 it feels like it’s midnight. Can’t have that ambient light ruining shit.
