Been off for two months and back to work Wednesday.

I told my wife that if I were in position to retire, I’d do so right now. I’ve enjoyed being home and my routine around here.

    Sigh… 14 more years.

    smoked some amazing ribs yesterday.

3 racks worth. Sister and BIL came over. Was expecting half left over, but there were none left.

I’ll take that as a big thumbs up!

(this was just the first rack and a half)

    lol

I did a half rack with a pineapple habanero glaze. It was amazing, and as much as I was worried it was going to be too spicy for people, it was the clear favourite and I should have made more.

    Next time.

    Highly recommend.

Did you sauce from the beginning, or just towards the end?

2 different dry rubs before, no binder. (meat church hot hog and voodoo). Sauced when hit 195, finished at 205. Rested for 30 mins. 275 pit the whole time.

Happy Labor Day Weekend! Look at @Nettdata over there, showing us up with his meats.

I think the guy that won the jalapeno popper contest earlier this month used a similar habanero sauce as a glaze. So good.

This weekend is the our last of the summer befo e school starts Tuesday. My gosh. My kid is starting school.

    Happy weekend everyone!

Dry rubs were on different slabs, not mixed. That way people had a choice of flavours. I only sauced half rack of each rub.

Came home from the hospital late Thursday. Discharge orders say I can do normal activity, just don't lift anything heavier than a gallon of milk. So, we went out on the boat today. Only lifted my 1/2 gallon water jug to my face.

I haven't had a cigarette since Monday, and that has been surprisingly easy. I'm eating healthier than I have in my life, which has also been surprisingly easy. Dropped my caffeine consumption to a single cup of coffee in the morning, and that part actually sucks a great deal. From watching the older people in my life fall right back into bad habits after a near death health event, I thought it would all be more difficult.

I “broke training” today from my diet plan to better enjoy my friend’s daughter’s wedding.

I ate and drank more carbs today than I’ve had in two weeks. And I’m amazingly sober despite it being open bar.

She was just a little girl when he and I met and now she’s a full grown woman and married.

Much like how your cars gas gauge drops to “E” so quickly once you’re past the half tank mark, time just flies by so fast the older you get. Crazy.

I’m on vacation with my in laws, happy birthday to me. On the plus side we made steak tacos for dinner and the chaos chimichurri I made was so good. On the downside, my MIL tried to take me clothes shopping for my weird, postpartum, 36 year old ice cream cone body, and it was…. not the birthday treat she intended it to be.

    Oh man, that would suck.

I'd need to get help to take a leak.

Anyone else live in a state that will require a prescription for this year's Covid shot? Luckily I have a good doctor so it won't be a problem, but RFK Jr. and his band of cronies can go fuck themselves.

Did up some homemade burgers for dinner tonight... and holy shit they came out great.

The burgers were good, but what really set them off was the bacon jam I made to go with them. Burgers had some garlic, onion powder, salt, black pepper, and some chopped up basil, which was great in and of itself. But the bacon jam... god dayum!

For those of you that don't know, bacon jam is basically chopped bacon, red onion, brown sugar, and balsamic vinegar all cooked down until it's a syrupy sticky goodness. The flavour is just insane.

I'm currently in a meat coma.

I see someone else watched the latest Rum and Cook video this morning...

I was actually planning on making the same exact thing tomorrow for the holiday.
